Paleo “Oatmeal” Chocolate Chip Cookies with Green Banana Flour

I love these green banana flour ” oatmeal” cookies. They are based on my favorite oatmeal cookies –https://www.seriouseats.com/easy-one-bowl-oatmeal-cookies-recipe and I was feeling really deprived in gluten free land (especially since I don’t really tolerate grain particularly oats well) but I decided to try them with my new love – green banana flour -it makes a regular chocolate chip cookie that is chewy like the original, especially with the addition of an extra egg.

So to make the green banana flour “oatmeal” cookies I made a few changes to the original recipe. The first is optionally to brown the butter, I love browned butter. I tried some coconut (which honestly I used to sub for some of the oatmeal in the original) and it was a little dry – so I soaked it in a little water first. – Perfect fluffy “oats”

Mock Oatmeal – Grain free cookies

These mock oatmeal cookies are inspired by my favorite oatmeal cookies https://www.seriouseats.com/easy-one-bowl-oatmeal-cookies-recipe. I love green banana flour – it works well as a substitute in this recipe where it’s subtle fruitiness goes well with the cookie dough.

As for substitutions. I always brown the butter, but they are yummy with melted ghee or coconut oil in its places. These are more like oatmeal cookies with flaked not shredded coconut, but shredded was delicious (just use less water) and they are also great with coconut sugar in place of both the regular and brown sugar. You could use cassava flour in place of the banana flour, but they will be more cakey instead of chewy. In the picture I used unreal milk chocolate pieces in addition to chocolate chips, added to the tops, for a festive touch.

Ingredients

  • 6 ounces butter (1.5 sticks, 170g) , ghee, or coconut oil melted (or better yet browned)

  • 1 Tbs Vanilla Extract

  • 3/4 cup packed brown sugar (200g)

  • 1 cup white sugar (200g)

  • 2 tsp kosher or sea salt (7g)

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • 8 oz. flaked coconut (if you use shredded use less water)

  • 1 cup boiling water

  • 2 eggs

  • 6 oz. green banana flour (1 Cup)

  • 1 1/2 Cups chocolate chips or dried fruit (or m&ms)

Directions

  • Melt/Brown and cool butter or coconut oil.
  • Soak coconut in boiling water.
  • Mix sugars, cinnamon and salt into butter, add eggs, vanilla when cool, and mix well.
  • Add banana flour and baking soda. and mix well.
  • Add coconut and chocolate and mix well.
  • Chill for an hour (or more)
  • Preheat oven to 325, scoop out dough in 1/4 to 1/2 cup increments and shape into balls. Space out on parchment lined cookie sheet.
  • Bake for about 15 mins until lightly browned on bottom, remove from oven and let cool on sheet for a few minutes before transferring to a rack or plate.
